Pineapple Skin Tea
Turn your pineapple scraps in to a delicious, gut-healthy infusion that is delicious sipped warm or stirred into your favorite mocktail
How to make it:
16 cups of filtered water
1 large pineapple, the peel and core
2 oranges
1 lemon
2 TBS grated fresh turmeric
3 TBS grated fresh ginger
2 springs of rosemary
2 cinnamon sticks
½ tsp fresh ground pepper
Scrub pineapple with vegetable brush or do a 20 minute vinegar/water soak. Rinse and pat dry the pineapple.
Use a paring knife to cut off just the skin and keep core. Juice the oranges and lemon. Pour the water into a large pot. Add all ingredients. Bring to a boil over medium heat and then simmer for at least an hour.
The longer it simmers the more flavorful it will be. Allow to cool slightly and then fine strain into a glass bottle or serve immediately.
Can be served chilled or re-warmed. Keep in the refrigerator for up to 10 days or freeze into cubes and use within 2 months.
